Hi Brandon,
The IOPS per EPS is very difficult to answer - we've seen up to 2500 IOPS on systems with 10000 EPS but the relation here is not linear!
The iops required vary greatly depending on the logmix sent to the logpoint.
Netflow data is much smaller and requires far fewer iops per eps than, for example, windows events, simply because they are much larger.
